Raquel De Oliveira: Managing Director
Despite wanting to be an oceanographer, Raquel took to hospitality like a duck to water. She worked at Quaglino’s, Chamberlain’s and Tuttons, in restaurants in Paris and owned her own restaurant in Cornwall. She’s passionate about restaurants that have the perfect combination of people, location and energy, like her favourite restaurant, Ceviche Soho. Raquel was the first person Martin first hired and since that very moment she has been instrumental in creating each restaurant and its team as well as running them.
Georgina Stephens: HR Manager
A lover of great food, Georgina spent time at the Gordon Ramsay Group and the Jamie Oliver Restaurant Group before joining our Ceviche Family. Her focus on work life balance as well as professional and personal development for all our Ceviche Family team members has been key to our success and growth. This helps create a stable culture and atmosphere and a place where our team feels comfortable and do the best work of their lives.
Zoltan Varga: Group Bars Manager
Born in Budapest, Hungary, Zoltan changed careers from financial adviser to barman when he moved to London. He joined our Ceviche Family in 2012 working first at Ceviche Soho then helped set up the bar at Andina, in Shoreditch. Constantly on the look out for new trends and innovations, he is a pioneer in pisco cocktail making having travellled several times to distilleries in Peru and worked with Peru’s top pisco experts.
Alessio Bascherini: Operations Manager
Alessio’s work is to guide and support management teams at our Ceviche Family restaurants to make sure they’re sharp and running smoothly – something he knows all about thanks to a background in fine dining.
Alessio was born on the Italian Riveria and started working in hospitality at the age of 14. When he moved to London, he worked at fish and seafood restaurant Chamberlain’s of London for 15 years. Since joining he’s overseen and supported the opening of our latest 3 venues and brought comedy alongside experience and attention to detail to our team.
Martin Morales: Chief Executive Officer
Our founder is the award-winning Peruvian chef, cookbook author, restaurateur and entrepreneur. He started Ceviche in 2012 to create the most exciting restaurants group in the world. Known as an ambassador of Peruvian food and arts he was born in Peru, but has lived in the UK for over 20 years. He has been cooking since the age of 9, and before creating Ceviche he worked as a music and tech industry exec running companies for Steve Jobs at Apple, for Disney and EMI and has worked with Ferran Adria, The Muppets, Miley Cyrus, members of the Buena Vista Social Club and The White Stripes.
